Zucchini Boats

Made this for dinner last night and they were a huge hit! 1. They are “boats” how cool is it to get to eat a boat and steer it all around your plate while eating and 2. I told my kids it was basically pizza in a boat (back to point 1 on the boat) and pizza, they’re favorite food in the whole entire world. But the best part, they each eat most of half a zucchini with little complaint.

These are great for using up that zucchini surplus everyone seems to get and delicious. I made the recipe for using just 1 zucchini that way it is super easy to adjust to the number of zucchini you want to make. I ate 2 halves and it was perfect, maybe for a super hungry night an added salad would be perfect to round out the meal.

Zucchini Boats

1 Zucchini
1/4 cup Ricotta Cheese
1/4 cup Pasta Sauce (I used my Veggie Bolognese, any tomato based sauce would work great!)
2 Tbsp Parmesan Cheese or Cheese Blend (I used a 4 cheese blend I get from Trader Joe’s)
Salt

Preheat oven to 350.

Cut ends of zucchini and cut in half lengthwise. Carefully scoop all the seeds and inner┬áparts out to make a “boat” shape. Season cut side as desired with salt. Carefully fill each half with half of the ricotta cheese. Then cover cheese with pasta sauce, half in each boat. Top each boat with 1 tbsp parmesan cheese. Place on baking sheet and bake 20-25 min. Serve immediately.
