Roasted Brussels Sprouts Stalk

Yum! I LOVE Brussels sprouts and they are so good for you too! Little powerhouses of nutrients! Both youngest loves them too, the other one not so much, however this recipe had both my kids asking for seconds before even touching the rest of their dinner! There is something that is just fun about roasting them right on the stalk, that may have been a big part of their enjoyment. They really liked getting to buy them on a stalk at the store too and were so excited to come home and make them.

I think this would make such a fun looking side for Thanksgiving as well! I personally think it looks awesome to present it on the stalk, but the recipe itself is just delicious if you wanted to just cut them off ahead of time for easier serving. Soo good, I think I may just need to go get another stalk of Brussels sprouts to roast!

Roasted Brussels Sprout Stalk

1 stalk Brussels Sprouts
1/4 cup Olive Oil
1/4 cup Balsamic Vinegar
2 Tbsp Honey
1 tsp Molasses
Salt and Pepper

Preheat oven to 350.

Rinse Brussels sprout stalk and place on baking sheet (you will really want to line this with foil for much easier clean up). In small bowl combine olive oil, balsamic vinegar, honey, and molasses. Drizzle all over Brussels sprouts stalk, turning to make sure to get all sides. Season with salt and pepper. Roast at 350 for 40-45 min, turn several times to cook and coat evenly. Cut off stalk and enjoy!
