Hawaiian barbecue anyone? It seems a bit wrong to not grill huli huli chicken, but this crockpot version is so full of flavor and so easy. It’s perfect for throwing in the crockpot in the morning to have ready n those busy weekday nights. You can totally prep it ahead of time too, through everything together in a freezer bag and freeze. I don’t do a lot of freezer meals right now, but I know a lot of friends that do and I think this would make a great one.
So my picture totally is boneless thighs, they worked good too, but I recommend bone in chicken for a moister chicken. I thought I had bone in thighs in the freezer when I went to make this and was surprised to find they were boneless… lol. Chicken quarters is what is typically used and what I typically use, but you can really use any chicken you prefer.
Crockpot Huli Huli Chicken
1-2 lb Chicken Quarters
1 8 oz can Tomato Sauce
1/2 cup Pineapple Juice
1/2 cup Soy Sauce (I use Aloha brand, it’s a Hawaiian soy sauce and I find it has very good flavor)
1/4 cup Chicken Broth
1/4 cup Brown Sugar
1/2 tsp Worcestershire Sauce
1 tsp Fresh Ginger, grated
Place chicken in crockpot. Mix remaining ingredients together and pour over chicken. Cook on low 8 hours or high 5 hours. I try not to cook it too long because I like for these for the pieces to still hold together.
