Pumpkin Chocolate Chip Cookies

I must say these are not my *favorite* cookie and I hadn’t planned on posting a pumpkin cookie recipe, but I made these based on my typically chocolate chip cookie recipe I use and they were the best pumpkin chocolate chip cookies I have ever had! So I decided to go ahead and post on them. I have never been a huge fan of pumpkin cookies, the pumpkin is just to moist and I love chewy cookies, especially when it comes to chocolate chip cookies and you just can not get that chewiness with pumpkin in the mix. Honestly I think I would like most pumpkin cookies if they were labeled muffin tops rather then cookies 🙂 That’s the consistency they seem to have. The flavor is great, but it is much more muffin top like than cookies like. These ones however not chewy like I would like were still really great with a glass of milk. Now writing this I really want some more…. I see some baking in my very near future! 🙂

Pumpkin Chocolate Chip Cookies

1/2 cup Butter, softened
1/2 cup Brown Sugar (I prefer dark brown for these)
1/2 cup Pumpkin, room temp
1 Egg, room temp
1 tsp Vanilla
1 cup Flour (I used whole wheat, if you use white you might want to add an extra 1/4 cup)
1/2 tsp Salt
1/2 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Allspice
1/4 tsp Cloves
1/2 cup Chocolate Chips
1/2 cup Cinnamon Chips (or more chocolate chips)

Preheat oven to 375

Cream butter and sugar together. Add pumpkin, mix until light and fluffy. Add egg and vanilla, mix until combined. In small bowl whisk together flour, salt, baking soda, and spices. Slowing mix dry mix into wet mix until well mixed. Fold in chocolate and cinnamon chips.

Drop spoonfuls onto baking sheet (I line mine with parchment paper for easier clean up). Bake at 375 for 11-13 minutes. Allow to cool for a minute or 2 on the pan and then move to cooling racks, attempt to cool completely before devouring 🙂
