Mushroom and Spinach Toasted Bread

So, I love mushrooms and I really love sauteed mushrooms. I saw an episode of Kitchen Nightmare’s one time (I think this was on the British version) and one of the dishes was mushrooms on toast, all I could think was YUM! It has been a favorite of mine since then. Sadly my husband does NOT like mushrooms so I don’t get to make it often. If that wasn’t the case I think this bread might become a weekly occurrence at my house!

I love this because it’s simple, it’s easy, and it comes together relatively quick and it’s delish. I think it makes a great appetizer, dinner side, or a good light meal on it’s own served with some salad (that’s how we had it the other night).┬áJust be careful not to burn the bread like I am so very good at doing under the broiler, I got distracted from my husband talking to me this time.

Mushroom and Spinach on Toasted Bread

1 Loaf French Bread
2 Tbsp Butter or Coconut Oil
8 oz Mushrooms, sliced
12 oz Spinach, chopped
1 clove Garlic, minced
1/2 cup Parmesan Cheese, grated (or some form of hard cheese blend)
Salt and Pepper

Slice bread in half length wise. Place bread cut side up on broiler sheet and toast under broiler until golden (not like mine…), remove from oven and set aside.

In large pan, heat butter or oil over medium heat. Add mushrooms, spinach and garlic, season with salt and pepper. Saute about 5-7 minutes, until mushrooms are soft and spinach has wilted. Drain excess liquid and spoon across the top of the bread, spreading it evenly. Top with with cheese and place under broiler again only for 1-2 minutes just to melt and slightly brown cheese. Serve warm.
